Some Cayman Jack products have been tested by a third-party agency, which utilized the R5 Competitive ELISA (Enzyme-Linked Immunosorbent Assay) test. The tests found that those products tested contained trace amounts of gluten. The Alcohol Tobacco Tax and Trade Bureau (TTB) uses these results for the limited purpose of determining whether there was any change in the amount of gluten detected in the product and the direction and magnitude of that change, but not for the purpose of quantifying the amount of gluten in the finished product. 


Cayman Jack products are fermented from grains that contain gluten, and some of its products are crafted to remove gluten. The gluten content cannot be verified, and the products may contain gluten.
